Don’t let the words vegan and gluten free scare you… this healthy meal is anything but boring. This is my go-to recipe for a quick and healthy breakfast, lunch or dinner. It is so versatile and substitutions are easily made depending on what you have handy in your fridge!
Vegan And Gluten Free Flatbread
Ingredients
- 2 Siete tortillas (the Cassava Flour one is my favourite)
- 1/2 an avocado (sliced)
- Engine 2 “Traditional Hummus”
- Organic Girl “Super Greens”
- Red onion (diced)
- Siete “Traditional Hot Sauce”
- Nutritional Yeast
- Chili Powder
Preparation
- Start by heating up your tortillas in a nonstick pan
- I usually put it on low heat and turn it as I feel necessary
- These tortillas are great because you can heat them up to the point of crispiness that you like
- If you prefer to make them “soft-shell” tacos, don’t heat them as long
- If you prefer to make them crispy like a flatbread, heat for longer
- Next top the heated tortillas with hummus, sliced avocado, diced red onion, mixed greens, hot sauce, and a dash of nutritional yeast & chili powder
