I wanted to share a great recipe for no sugar no fat muffins. It doesn’t sound too appetizing but I have my husband hooked on them!!
We have one every night with our green tea after dinner and I am so thrilled that my husband is on board with me for eating healthy.
No Sugar No Fat Banana Muffins
Ingredients
- 2 eggs
- 1 tsp vanilla
- 2 cups applesauce (I make my own in my magic bullet)
- 1 mashed banana
- 6 packets stevia
- 5 cups of rolled oats
- 1/4 cup ground flax seed
- 1 tbsp. cinnamon
- 3 tsp. baking powder
- 1 tsp. salt
- 2 3/4 cups mils
- You can add raisins, walnuts or carob chips
Directions
- Mix eggs, vanilla, applesauce, banana and stevia in a bowl
- Add in oats, flax, cinnamon, baking powder, salt and mix well
- Pour in milk and mix
- Add additional ingredients if desired (I recently made them and added raspberries and carob chips)
- Heat oven to 350 and bake for 30 minutes
