No Sugar No Fat Banana Muffins

I wanted to share a great recipe for no sugar no fat muffins. It doesn’t sound too appetizing but I have my husband hooked on them!!

We have one every night with our green tea after dinner and I am so thrilled that my husband is on board with me for eating healthy.

No Sugar No Fat Banana Muffins

Ingredients 

  • 2 eggs
  • 1 tsp vanilla
  • 2 cups applesauce (I make my own in my magic bullet)
  • 1 mashed banana
  • 6 packets stevia
  • 5 cups of rolled oats
  • 1/4 cup ground flax seed
  • 1 tbsp. cinnamon
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 2 3/4 cups mils
  • You can add raisins, walnuts or carob chips

Directions 

  • Mix eggs, vanilla, applesauce, banana and stevia in a bowl
  • Add in oats, flax, cinnamon, baking powder, salt and mix well
  • Pour in milk and mix
  • Add additional ingredients if desired (I recently made them and added raspberries and carob chips)
  • Heat oven to 350 and bake for 30 minutes
