Vegan Chocolate Chip Banana Cookies

Makes 16 medium cookies

Ingredients

  • 1/2 cup extra light olive oil
  • 1/2 cup brown sugar
  • 1 tsp pure vanilla extract
  • 1 tsp water
  • 1/4 – 1/2 cup mashed banana (acts as an egg substitute)
  • 1 1/4 cups organic unbleached flour
  • 1 tsp baking soda (aluminum free)
  • 1/4 tsp himalayan pink salt
  • 1/3 – 1/2 cup dairy free chocolate chips

Directions

  • Preheat oven to 350F.
  • In a medium bowl, cream together with a whisk, the olive oil and sugar.
  • Stir in vanilla extract, water, salt.
  • Add in mashed banana and whisk well.
  • Next, add the baking soda and flour, and gently mix together until a dough forms. DO NOT over mix. Dough will have a sticky consistency.
  • Fold in chocolate chips.
  • Using a 1.5 tbsp cookie scoop, drop cookie dough onto non-stick baking sheets. Flatten cookies slightly with the back of a mug or spoon.
  • Bake for 9 mins or until puffed and slightly browned.
  • Allow cookies to sit on baking sheets for a minute, after removing from the oven, and transfer to a cooling rack.

Store cookies in an airtight container for up to 5 days.
