Vegan Red Curry Macaroni
Ingredients
- 2 cups gluten-free macaroni
- 1 can chickpeas
- 1 can coconut milk
- 1/2 white onion
- 2 heaping cups shiitake mushrooms
- 1 tbsp chopped garlic
- 2 handfuls chopped spinach
- 1 tbsp red curry paste
- 2 1/2 tbsp nutritional yeast
- 1 tbsp Vegan cream cheese
- 1/4 tsp Himalayan salt
- pepper to flavour
- coconut oil to fry
Instructions
- Heat coconut oil in a pan. Bring pot of water to boil.
- Fry chopped onion & garlic in melted oil until caramelizing
- Add mushrooms
- Once slightly cooked, add coconut milk, red curry paste, nutritional yeast, salt & cream cheese.
- Add noodles to boiling water. Cook until tender. Strain. Rinse.
- Add drained and rinsed chickpeas to saucepan.
- Add in spinach and mix until wilted.
- Mix in the macaroni noodles.
- Season with pepper to taste.
