Vegan Red Curry Macaroni

Ingredients

  • 2 cups gluten-free macaroni
  • 1 can chickpeas
  • 1 can coconut milk
  • 1/2 white onion
  • 2 heaping cups shiitake mushrooms
  • 1 tbsp chopped garlic
  • 2 handfuls chopped spinach
  • 1 tbsp red curry paste
  • 2 1/2 tbsp nutritional yeast
  • 1 tbsp Vegan cream cheese
  • 1/4 tsp Himalayan salt
  • pepper to flavour
  • coconut oil to fry

Instructions

  • Heat coconut oil in a pan. Bring pot of water to boil.
  • Fry chopped onion & garlic in melted oil until caramelizing
  • Add mushrooms
  • Once slightly cooked, add coconut milk, red curry paste, nutritional yeast, salt & cream cheese.
  • Add noodles to boiling water. Cook until tender. Strain. Rinse.
  • Add drained and rinsed chickpeas to saucepan.
  • Add in spinach and mix until wilted.
  • Mix in the macaroni noodles.
  • Season with pepper to taste.
