Vegan Toona Melt

One of the biggest concerns I hear from people who are considering transitioning to a plant-based lifestyle is that they won’t be able to eat their favourite foods anymore.  I can tell you now, this is such a misconception!  There are great vegan recipes (and restaurants!) for pizza, wings, mac & cheese, nachos and even sunny side up ‘eggs’!  It really is so easy (and inexpensive!) to eat healthy and cruelty-free food.

I recently made a Vegan Toona Melt that really hit the spot so I wanted to make sure I shared it with you all!  I’d love to know if you give it a try so please leave me a comment below if you do!

Vegan Toona Melt

Serves 4

Ingredients 

  • 1 tin vegan toona*
  • Juice of 1/2 lemon
  • 1 TBSP mustard
  • 1 TBSP vegan mayo of choice (I used Just Mayo brand in the Chipotle flavour for a bit of ‘kick’)
  • 1-2 chopped dill pickles
  • Salt & Pepper to taste
  • 1 TBSP vegan butter (I used Earth Balance)
  • 8 slices Chao Creamy Original vegan cheese (the best cheese for ‘melting’!)
  • 8 slices Silver Hills Bakery Little Big Bread**

* I found vegan toona at Vegan Supply in Vancouver (they also have a website where you can place an order for pick-up or delivery as well).  You could also try Amazon or Whole Foods, or any other healthier grocery stores, depending on where you are in the world.*

** I enjoy this bread as I’m more of a ‘filling’ person than a ‘bread’ person.  The slices are nice and thin so you get to enjoy the filling more than getting full on the bread!**

Directions

  • In a medium bowl, mix together the toona, lemon juice, mustard, mayo, dill pickles and salt & pepper.
  • Lightly toast the bread slices in a toaster or toaster oven
  • Add the vegan butter to a frying pan over medium heat
  • Optional: add some additional mustard and mayo to each side of the toasted bread slices
  • Add 1 slice of cheese to each slice of toasted bread (2 slices per sandwich)
  • Scoop a few TBSP of the toona mixture onto each sandwich
  • Place one sandwich at a time into the frying pan and heat for 1-2 minutes per side to melt the cheese
  • Slice each sandwich in half and enjoy!  If you have extra ‘filling’ it should keep in the fridge for a few days.  You could serve each sandwich with a soup, salad, pickles or avocado (with salt & pepper and hot sauce!) on the side
