I’m always trying to come up with more healthy treats for my afternoon or evening snack. I had some strawberries in the fridge which really needed to be used and normally I would add them to my smoothie but with the cold and snow outside, I wanted something else. I remembered the dark chocolate in my cupboard and decided to make chocolate covered strawberries! Because why not!
Strawberries are packed with antioxidants and are the highest in vitamin C compared to other berries as well as better in iron and potassium albeit a little lower in vitamin A. One serving of strawberries contains about half of you daily requirement of vitamin C, so they are great for boosting your immune system. They are also a good source of Manganese which is needed for good nervous system and brain health.
Be sure to use organic strawberries to avoid any pesticides.
Dark chocolate has a range of health benefits but they are also high in fat so should be eaten in moderation. Dark chocolate has a high antioxidant content. The higher the cacao percentage, the more antioxidant will be consumed. The benefits of cacao is increased blood flow to the brain and heart, improves mood and lower blood pressure just to name a few.
Chocolate Covered Strawberries
Ingredients:
- 10-12 organic strawberries (more is okay too)
- 150g dark chocolate (preferable min 70% cocoa content)
- 1 drop of Orange essential oils – optional (only use oils approved for internal use)
Instructions:
Wash the strawberries under cold water and pat them dry. Let them dry completely before dipping them in the chocolate.
Add a little water to a saucepan and bring the water to a simmer. Add the chocolate to a heat proof bowl and put it in the saucepan. Stir occasionally until the chocolate is all melted and remove the saucepan from the heat. Add a drop of Orange essential oil and stir again.
Dip the strawberries in the chocolate until fully covered. Lay down on parchment paper until the chocolate is completely set.
So simple but so delicious! Store in a glass container in the fridge.
