This versatile dish can be served as an appetizer at your next dinner event or eaten as a main course when you are looking for a quick healthy meal. Add a twist to your next taco night by using this mixture as a topping. It is also nice served over a salad of mixed greens and quinoa. It has made its way to many social gatherings over the years, and never fails to disappoint. It’s a nice addition to summer BBQ’s as it is a cooling dish. It serves well with your favourite type of cracker or tortilla chip; my preference is “Mary’s Original Crackers”. This dish makes it easy to enjoy all of the health benefits that avocados have to offer. If you’re someone who hasn’t quite acquired the taste for them, this is a great recipe to get you started. Chunky Avocado Dip
Ingredients
- 2 tablespoons of olive oil
- 1 tablespoon of white balsamic vinegar
- 2-3 cloves of garlic
- 1 tablespoon of parsley
- 1 tablespoon of oregano
- 1/4 cup of chopped red onion
- 1 quart of chopped cherry tomatoes
- 1/4 to 1/2 cup (varies on your preference) of feta cheese
- 2 chopped avocados
Instructions
- Prepare all ingredients, except for the avocados, ahead of time and refrigerate.
- Add avocado before serving.
- As a dip, serve with your favourite cracker or tortilla chips.
