Here is my go-to quick and easy tofu scramble. You can serve this with roasted vegetables of your choice, serve in a wrap, or enjoy on its own.
Easy “Cheesy” Tofu Scramble
Ingredients
- 1 package of organic tofu (I use extra firm)
- Nutritional Yeast (1-2 tbsp)
- Turmeric (1-2 tbsp)
- Soy milk (1/4 cup)
- Salt
- Pepper
Instructions
- Take tofu out of package, place on counter/cutting board and pat dry with a paper towel
- Chop tofu into small cubes, or you can use a masher if you prefer the real scrambled texture
- Add tofu to the frying pan at medium heat, keep on medium heat for about 3 minutes
- Add turmeric and stir (you can put however much you like, personally I like all of the tofu to be yellow to resemble real scrambled eggs)
- Let simmer for another 2-3 minutes
- Add nutritional yeast and stir (again, you can put however much you like for that cheesy texture)
- Add salt and pepper
- Turn off heat, add soy milk and stir
