Loaded Eggplant Nachos

Coming up with a healthy meal the whole family will love is not an easy task. Eggplant Nachos is sure to be a hit in your home as it is in mine. It’s quick, easy and most importantly, nutritious. Eggplants are exploding with health benefits, vitamins, and minerals.

Eggplants are full of fibre, potassium, vitamins C, E, K, B6, Iron, Copper, Phytonutrients and Antioxidants. Their purple pigment is derived from a flavonoid called anthocyanin which has been found to help lower blood pressure. Eggplants are also known to help lower the risk of heart disease, help prevent certain cancers, aid with maintaining blood sugar in diabetics, and help prevent the calcification of the arteries.

Superfood or what! Due to all these benefits, I have found a way to incorporate them into my families diet by making them delicious. Who doesn’t love Nachos! Here’s the recipe for all you Wellness Warriors out there.

Loaded Eggplant Nachos

Ingredients

  • 2 large eggplants sliced round
  • 1lb ground chicken
  • Plain greek yogurt (in place of sour cream)
  • 1 Avocado
  • 1 can of black beans (rinsed or you can mash them into a paste)
  • Grape tomatoes
  • 1 can of sliced black olives
  • 2 green onions chopped
  • 1 can of green chiles or some jalapeno (optional)
  • Olive oil
  • Spices – Garlic powder, Onion powder, Cumin, Salt, Pepper, (cayenne if you like spicy)
  • Nutritional yeast

Instructions

  • Preheat oven to 425 F
  • Slice your avocado into thin round pieces. Lay them on a baking tray. Brush a mix of olive oil, salt, and pepper on each one. Place in oven until eggplant looks cooked through and crispy. (If you like, you can bake your tomatoes at the same time or have them fresh)
  • While the eggplant is cooking saute your chicken in some coconut oil or whatever oil you have on hand. (I prefer to use an oil that can take high temperatures without being harmful) Sprinkle the chicken with the spices to your liking.
  • When the eggplant is ready, take it out of the oven. Transfer to a serving dish. Add the ground chicken on top, sprinkle the nutritional yeast on the chicken, sliced avocado, black beans, tomatoes, black olives, green onion, chiles, and dabs of greek yogurt.

Voila, Loaded Eggplant Nachos!
