Looking for a quick but healthy supper? Try out this easy chickpea stew!
Easy Chickpea Stew
- 1 can of crushed tomato
- 1 handful of spinach (or as much as you like)
- 1 can of chickpeas
- 1 cup frozen broccoli
- 1/2 an onion
- 1 clove of garlic
- Saute the onion and garlic on medium heat for 3-5 minutes.
- Add chickpeas, crushed tomatoes, and frozen broccoli.
- Simmer for 25 minutes, add the spinach in the last 5 minutes!
Add other vegetables as you like, such as corn, carrots, bell peppers. If you are looking to enjoy a thicker stew, add tomato paste or corn starch.
Also, feel free to add different spices such as parsley, basil and/or oregano.
