Looking for a quick but healthy supper? Try out this easy chickpea stew!

Easy Chickpea Stew

Ingredients

  • 1 can of crushed tomato
  • 1 handful of spinach (or as much as you like)
  • 1 can of chickpeas
  • 1 cup frozen broccoli
  • 1/2 an onion
  • 1 clove of garlic

Instructions

  • Saute the onion and garlic on medium heat for 3-5 minutes.
  • Add chickpeas, crushed tomatoes, and frozen broccoli.
  • Simmer for 25 minutes, add the spinach in the last 5 minutes!

Add other vegetables as you like, such as corn, carrots, bell peppers. If you are looking to enjoy a thicker stew, add tomato paste or corn starch.

Also, feel free to add different spices such as parsley, basil and/or oregano.
