Greek Buddha Bowl

Ingredients

  • 2 cups spinach
  • 1 cup cooked quinoa
  • 1/4 cup chopped red pepper
  • 1/4 cup chopped green pepper
  • 1/2 cup chopped cucumber
  • 1/8 to 1/4 cup of chopped red or white onion
  • 1/3 cup chickpeas
  • 3 sliced olives
  • 2 tbsp hummus
  • 1 tbsp crumbled goat feta

Sauce

  • 2 tsp mayo
  • 1 tbsp chopped fresh dill
  • 1 clove chopped garlic
  • lemon juice
  • water to thin
  • cilantro

Instructions

  • Combine sauce ingredients.
  • Layer all ingredients into a bowl and top with sauce
