No-Bake Peanut Butter Bites – vegan & gluten-free

5-minute recipe, no baking required, grab and go healthy snack that kills any sweet tooth!

No-Bake Peanut Butter Bites

Ingredients

  • 1 cup of natural peanut butter
  • 1 cup of gluten-free rolled oats
  • 3/4 cup of unsweetened coconut
  • 1/3 cup of pure maple syrup

Optional: 1/4 cup of vegan chocolate chips OR 1/4 cup of goji berries

Instructions

  • Combine the peanut butter and maple syrup into a pot and heat up until soft (Approx. 2-3 mins on low)
  • Combine the oats, coconut and any optional ingredients you choose into a bowl and mix thoroughly into a dry blend
  • Add the slightly heated peanut butter and maple syrup to the dry ingredients and mix until it forms a batter-like substance
  • Roll into small balls, about the size of a teaspoon – this should make around 20-25 bites
  • Lay out on a pan and store in the fridge for one hour
  • Enjoy!
