Peanut Butter Chocolate Chip Cookies

Here’s What You’ll Need:

  • 1 cup Almond Flour
  • 1/4 cup Coconut Flour
  • 1/2 tsp Baking Soda
  • 1/2 cup Erythritol
  • 1 dash Sea Salt
  • 1/2 cup Creamy Peanut Butter w/ Flaxseed (Earth Balance)
  • 1 tsp Maple Syrup
  • 1 large, Egg
  • 1 tbsp melted Coconut Oil
  • 1.50 tsp Vanilla extract
  • 1/3 cup Dairy Free Dark Chocolate Chips (Enjoy Life)​

​Here’s What You’ll Need To Do:

  • In a large bowl combine all dry ingredients (Almond flour, Coconut flour, baking soda, erythritol and sea salt
  • In a separate bowl, combine all wet ingredients (PB, Maple Syrup, Egg, Coconut oil, Vanilla Extract)
  • Combine the wet ingredients into the dry mixture
  • Fold in the chocolate chips. Be sure not to over mix!
  • Roll into 20 small balls (avoid over handling) and place on a greased baking sheet. Gently press down on the balls to form your desired cookie shape and thickness
  • Bake in the oven at 350 degrees for 10-15 minutes
