Roasted Chickpeas

The chickpea is a legume that has many health benefits. They are full of protein, fiber, manganese, folate, copper, phosphorus, iron and zinc. Due to their mild taste they make a great canvas to add your desired seasonings. They work great with sweet and savory spices. Roasting them gives them a nice crunch for easy snacking, or adding to salads, or stir-fries.

Roasted Chickpeas

Ingredients

  • 1 can of chickpeas (rinsed and drained)
  • 2 tbl olive oil
  • ½ tsp salt
  • Optional spice ideas to sprinkle on: Curry, paprika, cinnamon, allspice, nutmeg, etc.

Instructions 

  • Pat dry the rinsed and drained chickpeas and lay them on a parchment lined baking sheet.
  • Add olive oil, salt and any other seasonings you desire.
  • Put the chickpeas in the oven at 425 degrees for 30 minutes, or until desired crunch level.
  • Allow chickpeas to cool and toss on salads, stir-fries, or just eat as a healthy, protein-rich snack.
