This is a simple crowd pleasing recipe that can be used as a basic dough for burgers as well.It is packed with flavor, protein and minerals.
Vegetarian Meatballs
Ingredients
- 1/2 cup chickpeas
- 1/2 cup quinoa
- 1-2 shredded carrots
- 1/2 medium onion, diced
- 1-2 minced garlic cloves
- 1/8 cup pumpkin seeds
- 1/4 tahini paste
- 1 cup ground oats (or other flour of your liking)
- 1 flax egg (1 TBS flax to 3 TBS water)
- salt and pepper to taste
- *water if needed
Instructions
- Preheat oven to 375
- Add ingredients to food process and pulse until a smooth dough is formed.
- Roll into 1″ balls or press into patties and arrange on a lined baking sheet.
- bake for 10-12 minutes or until the balls are browned and firm to the touch.
- Add to a basic tomato sauce or enjoy with rice and a salad.
This recipe also works well with black beans or lentils in place of chickpeas.
Makes 24 1″ balls
Makes 6-8 burgers
