Veggie and Cheese Frittata

This easy baked egg dish makes an economical nutritious breakfast, lunch or dinner. It is a good recipe to use up leftover veggies, so feel free to substitute for what you have on hand.

Yummy Veggie and Cheese Frittata 

Preheat oven to 400 F

Recipe

In large skillet on medium heat, saute 3-5 min. 

  • 1 Tbsp Oil
  • ½ cup chopped onion
  • ½ cup sliced mushroom

Meanwhile in large bowl whisk together

  • 4 large eggs
  • ¼ cup Cream
  • Salt and Pepper
  • 1 tsp Worcestershire

Instructions 

  • Add 2 cups Spinach or other greens to the skillet and saute 1-2 min.
  • Sprinkle 1 cup shredded cheese on top of veggies.
  • Pour egg mixture evenly over the cheese.
  • Turn off stove top and place skillet in warm oven.
  • Turn the oven to broil and cook for 4-5 minutes. 
  • While the frittata cooks dice 2 Roma Tomatoes.

Take frittata out of oven, cut into 4 slices. Place each slice on a plate and top with diced tomato.
