Whole Roasted Cauliflower
(Vegan turkey during festive season)
This recipe is vegan, gluten free, grain free, high in fiber and delicious. It can be served as a starter. Last year I made this for Thanksgiving inspired by my friend’s recipe.
Ingredients
- 3-4 tbsp of Olive oil
- 4 tsp of curry power
- Salt
- 1 medium size whole cauliflower
- Cilantro for garnishing
Directions:
- Take one medium size cauliflower. Rinse it well and cut the stem, keeping the flower part of cauliflower as a whole.
- In a big pot add enough water to submerge the whole cauliflower and cook it to about 80%.
- Meanwhile in small bowl mix salt, curry powder and olive oil to a paste consistency.
- Once the cauliflower is cooked al dente place it in a baking pan or bowl and evenly spread the paste all over it.
- Preheat oven to 425 F.
- place the cauliflower in the oven and bake for 30 min or until the outer layer turns golden brown.
Preparation Time:
- Gravy: 5 min
- Cauliflower cooking: 10 min
- Baking: 30 min
- Total: 45 min
I have cooked the cauliflower al dente before placing it in the oven to save time. Alternatively you can skip step 2 and bake for 60 min or more. And paste can also be changed as per your taste.
