Morning Glory

This breakfast recipe is amazing as it’s not only super quick to make but it also includes all the macronutrients: protein, fat, and complex carbohydrates. Start your day with a positive mindset and fill your belly with a nutrient rich meal!

Morning Glory

Ingredients (makes 1 meal)

  • Half avocado
  • 2 eggs
  • 1 piece Ezekial bread
  • a handful of blueberries
  • 1/2 teaspoon coconut oil
  • frying pan and flipper
  • toaster

How To Make

  • Slice avocado in half. Put one-half in a bag and store in fridge. Cut the other half into small slices.
  • Turn stove on to high and let the pan heat up. Once hot, turn the stove down to half and put half 1/2 teaspoon of coconut oil in the pan to coat.
  • Crack 2 eggs into the pan.
  • Cook to your desire – sunny side up, over easy, over medium or over hard.
  • Put 1 piece of Ezekial bread into toaster and toast to your desire.
  • Once done, assemble everything on the plate. The toast can be used to dip into your eggs (i.e. over easy) or the eggs can be eaten on the toast. The avocado can be eaten alone or added to the toast and/or eggs.
  • Add a handful of blueberries as a treat!
