Roasted Curried Cauliflower

Cauliflower is one of the healthiest foods. It is part of the cruciferous family, which means it is an excellent source of natural antioxidants and has disease-fighting properties. It is also high in vitamin C and a good source of vitamin K, folate, vitamin B6 and fiber. Cauliflower itself doesn’t have a lot of flavour, so jazz it up with some great seasonings. Curry and turmeric pair well with cauliflower and they are also two spices that have incredible anti-inflammatory properties.

Ingredients

  • 1 Cauliflower head
  • ½ tsp pepper
  • ½ tsp salt
  • 2 tbl olive oil (or coconut oil)
  • 1 tbl lemon juice
  • 1 tsp curry powder
  • ½ tsp turmeric (optional)

Instructions 

  • Wash and dry cauliflower and cut into bite sized florets.
  • Lay cauliflower on a parchment lined baking sheet.
  • Add olive oil, salt, pepper, lemon juice, curry powder and turmeric if desired.
  • Put the cauliflower in the oven at 425 degrees for 25-30 mins until desired doneness is achieved.
  • Allow cauliflower to cool and enjoy.
