When I first started my journey to wellness, giving up the occasional sweet treat was hard for me, as it is for many of us. I suffered in silence, indulging when the sugar craving overtook me. These times of weakness always end in increased inflammation and an autoimmune flare up, which can take weeks to fully recover from, so for the last few years my cravings for sweets were met by having a square of dark chocolate.
Then one day a friend asked if I had heard of making a single serving cake in a coffee mug! Since that day I have experimented with several recipes and have found the combination I like the best! I always start with the basic recipe, and add in the flavours I want. I hope you all enjoy it as much as I do!
Basic Vanilla Cake Recipe
Ingredients
- 2 Tbsp melted Butter (preferably grass fed or sub coconut oil)
- 1 Large Egg
- ¼ Tsp vanilla
- 4 Tbsp Almond Flour
- 1 Tbsp Coconut Flour
- 1 Tbsp Sweetener of choice (swerve, coconut sugar, honey, maple syrup)
- ½ Tsp Baking Powder
Instructions
- Melt butter in a large mug in the microwave.
- Add the vanilla and egg and mix well.
- Add all the dry ingredients and mix well. (add a little water to get desired consistency if needed)
- Place mug back in the microwave and cook on high setting for 1.5 min.
- Serve with whipped cream and enjoy!
**Variations: add the following to the above recipe**
Chocolate
- 1 Tbsp Cocoa
- Optional (a few chocolate chips, cacao nibs, a dash of cinnamon)
Carrot Cake
- 2 Tbsp grated carrot
- 1/2 tsp cinnamon
- Optional (a few chopped walnuts, or pecans, or raisins)
Pumpkin Pie
- 2 Tbsp pumpkin puree
- ½ tsp pumpkin pie spice
Banana
- 2 Tbsp mashed banana
- ¼ tsp cinnamon
- Optional (a few chopped nuts, or chocolate chips)
Notes
- The above recipe is quite large, so be sure to use a big mug and share with someone, or save a piece for later! Cook time may vary a little depending on your microwave.
