Peanut Butter Chocolate Chip Cookies
Here’s What You’ll Need:
- 1 cup Almond Flour
- 1/4 cup Coconut Flour
- 1/2 tsp Baking Soda
- 1/2 cup Erythritol
- 1 dash Sea Salt
- 1/2 cup Creamy Peanut Butter w/ Flaxseed (Earth Balance)
- 1 tsp Maple Syrup
- 1 large, Egg
- 1 tbsp melted Coconut Oil
- 1.50 tsp Vanilla extract
- 1/3 cup Dairy Free Dark Chocolate Chips (Enjoy Life)
Here’s What You’ll Need To Do:
- In a large bowl combine all dry ingredients (Almond flour, Coconut flour, baking soda, erythritol and sea salt
- In a separate bowl, combine all wet ingredients (PB, Maple Syrup, Egg, Coconut oil, Vanilla Extract)
- Combine the wet ingredients into the dry mixture
- Fold in the chocolate chips. Be sure not to over mix!
- Roll into 20 small balls (avoid over handling) and place on a greased baking sheet. Gently press down on the balls to form your desired cookie shape and thickness
- Bake in the oven at 350 degrees for 10-15 minutes
