Looking for a quick and simple delicious breakfast that is packed with nutrients, superfoods, and plenty of protein to keep you full until snack time? If so, you have to give this recipe a try! This meal is a great way to start your day. Not only is it packed with great nutritional value, its super refreshing, and it’s hard to believe it’s not something you would serve for dessert.
I must admit that I was skeptical about the whole idea of placing smoothies in a bowl. Why would you blend something up that’s made to be slurped from a cup, then throw it in a bowl to devour it one spoon at a time? It must have been all the mouthwatering creations in photo form on my Instagram feed of people enjoying their smoothie bowls that convinced me to give it a try. Yes, I succumbed to the social pressure, but am so glad that I did. Not only did I love it, but it is kid approved with my 7 and 4 year old daughters devouring every little bit.
So why is it so nutritious?
It’s packed with Vitamins A, B6, C, D, K, Folate, Calcium, Iron, Potassium, Manganese, protein, and fibre. In this recipe alone, you are enjoying 1 serving of fruit, ½ a serving of vegetables, 40 grams of protein, and 14 grams of fibre.
Blueberries are packed with antioxidants, which are required by the body to neutralize free radicals that can cause damage to our cells and DNA. The phytonutrients contained in blueberries help to reduce the risk of heart disease, they are known to aid in digestion and urinary tract health and may help to reduce blood pressure.
Leafy greens are packed with Vitamin A, which is crucial to building your immune system. They also contain a powerful antioxidant, lutein, which is known to protect eye sight. Kale and Swiss chard belong to the cruciferous vegetable family, which some research suggests they contain cancer-fighting properties, and spinach is known to help aid in keeping your blood pressure in good range.
Like blueberries, chia seeds also contain a high amount of antioxidants. They are also packed with fibre, which is important in keeping us regular and supporting proper waste and toxin elimination, feeds the friendly bacteria in our gut which ensures proper nutrient absorption. They are high in Omega-3s and are also known for helping improve exercise performance.
I opted to add a protein powder supplement to this recipe, as it was a perfect pre-workout meal. Also, the high amount of protein in this recipe helps reduce appetite, which makes it a great choice for those trying to lose weight.
Blueberry Superfood Smoothie Bowl

Ingredients:
- 1 cup of frozen wild blueberries
- 1 cup of assorted super greens (kale, spinach and/or Swiss chard)
- 1/2 cup blueberry kefir
- ½ cup of plain Greek yogurt
- 1 scoop of Vanilla Whey Protein Powder (or your favorite kind!)
- 2 Tbsp of chia seeds
- Shredded coconut, frozen blueberries and chia/hemp seed mix, to top
Instructions
- Place all the ingredients, except the toppings, into a blender. Blend on the highest setting for 30 to 45 seconds, or until everything is blended and has a smooth and thick texture. Add a little bit more kefir if mixture is too thick.
- Pour the mixture into a serving bowl. Top with shredded coconut, frozen blueberries and chia/hemp seed mix.
Enjoy right away before it melts away!
