Whether you are on a candida or sugar-free diet, trying to balance your blood sugar or lower inflammation by cutting out the top inflammatory foods, these muffins will satisfy your sweet tooth without jeopardizing your health goals.
Gluten-Free, Dairy-Free and Sugar-Free Blueberry Oatmeal Muffins
Ingredients
- 2 eggs
- 4 tbsp coconut oil
- 1 cup coconut or almond milk
- 1 cup brown rice flour
- 1 cup gluten-free rolled oats
- 3 tbsp tigernut flour (or you could use more rice flour)
- 1 tbsp cinnamon
- 1 tbsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/8 tsp stevia powder
- 1 cup fresh blueberries
Instructions
- Using a mixer, combine the eggs, melted coconut oil, coconut or almond milk and vanilla extract.
- Then add in all your dry ingredients and mix thoroughly.
- Add your blueberries and carefully mix them in by hand to avoid crushing them (or making your batter turn bright blue!).
- Line your muffin tray with 12 parchment muffin cups and distribute the batter between all of them.
- Bake at 350 F for 20 minutes or until your toothpick comes out dry.
