Benevolent Brownie Bites

April 18, 2019

Do you have a bunch of nearly black bananas sitting on your kitchen counter that you know you’re not going to eat, but don’t want to waste?

Well, if you’re like me and you’re tired of the same old go-to banana bread recipe, I’ve got a treat for you.

These decadent brownie bites are entirely plant-based, require minimal ingredients & make for a tasty treat that’s still a healthier alternative to your typical brownie or cake recipe.

They’re not too sweet or overwhelmingly banana-y. They’ve got a rich, chocolate flavour and make for a perfect after dinner snack for vegans & omnivores alike!

Benevolent Brownie Bites

Ingredients

  • 1 large, or 2 small very ripe bananas
  • ½ cup melted coconut oil
  • ¼ cup coconut or date sugar
  • ¼ cup of cane sugar
  • ¼ cup brown sugar (you can replace this with additional coconut or date sugar if you like, but I think the texture is better with all three types)
  • 2 tsp pure vanilla extract
  • ½ tsp baking powder
  • ¼ tsp salt
  • 2/3 cup cocoa powder
  • 1 cups flour
  • ½ cup dairy-free dark chocolate chips

Instructions

  • Preheat the oven to 350 degrees F.
  • Melt the coconut oil & mix in a large bowl with mashed bananas at room temperature
  • Add in the sugars, vanilla extract & salt
  • The stir in the cocoa powder until fully incorporated
  • In a separate bowl whisk together the flour & baking powder
  • Slowly fold the flour mixture into the chocolate mix
  • Before the flour is fully incorporated, add in the chocolate chips
  • Continue to combine all ingredients until a nice dough forms
  • Roll dough into 1-2 Tablespoons balls & place evenly on a non-stick cookie sheet
  • Flatten the tops of the balls of dough slightly with your palm
  • Bake in the oven for 11- 13 minutes
  • Remove finished cookies from the oven & let sit for a moment before moving them to a wire rack to cool

Enjoy!
