Middle Eastern Salad with a Twist

Ingredients

  • 1 cup of cooked black lentils
  • ¼ cup of feta cheese (cubes)
  • 1 baked sweet potato (cubes)
  • 1 diced tomato
  • 1 diced cucumber
  • 1 diced green onion

Dressing (the twist)

  • 2 tablespoons of olive oil
  • 2 tablespoons of squeezed lemon
  • 1 tablespoon of pomegranate molasses
  • 1 tablespoon of squeezed orange juice
  • 1 teaspoon of honey
  • Pinch of sumac
  • Pinch of salt

Mix all the ingredients together and add it to your salad bowl. Enjoy!
