Super Healthy Kale Salad

I love this salad and have it often. You can make lots of it and refrigerate it for several days.

1 bunch of Kale chopped finely
1/4 cup of dried cranberries
1/4 cup of chopped pecans
Feta cheese to taste
Pink Himalayan salt & pepper to taste

Vinaigrette
5 T olive oil
3 T lemon juice

Combine all salad ingredients, whisk the olive oil and lemon juice and pour over salad. Cover and refrigerate or serve immediately.

The combination is jammed packed with nutrients and, best of all, it’s yummy!
