3 Easy And Filling Salad Recipes

Salad can be boring right!? It can be. I had such a hard time consuming salad for a long time until I discovered how much I could put in salad to make it more filling and more delicious.

Salad greens alone are not very filling. They are, however, very nutritious! Here are 3 salad’s that I rotate every day for my lunch, pack in those greens and veggies people!

Sweet Potato and Arugula

  • 1-2 cups of mixed greens or romaine lettuce
  • 1 cup arugula
  • 1 cup sweet potato
  • 1 cup mixed veggies (cucumber, tomato, peppers, onions)

Dressing

  • 1 tsp apple cider vinegar
  • 1.2 tsp maple syrup
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder

Burrito Salad

  • 1-2 cups mixed greens or romaine lettuce
  • 1/2 cup rice (brown or white)
  • Diced tomato
  • Diced onion
  • 1/2 avocado
  • Salsa for dressing!

Spinach Pasta Salad

  • 1-3 cups spinach
  • 1/4 cup cooked pasta
  • 1/2 cup chickpeas
  • Diced tomato, onion, cucumber, peppers (any veggies you love!)
  • 1/2 tsp pumpkin or sunflower seeds

Dressing

  • 1 tsp olive oil
  • 1 tsp vinegar
  • 1/2 tsp finely chopped onion
  • 1/2 tsp basil
  • 1/2 tsp garlic powder (salt and pepper to taste)
