I have an OBSESSION with pancakes. Something about the lightness. Something about them being part breakfast part sweets. Something about how they make me feel all warm and fuzzy inside when I eat them. Finding a healthier alternative to regular pancakes was imperative given my obsession. This recipe is super easy to make and you’ll probably already have all the ingredients!
Banana Pancakes
Ingredients
- 1 Banana
- 2 eggs
- 1/3 cup oats
- 1/2 tsp baking powder
- cinnamon to taste
- syrup (I recommend Walden Farms syrup)
- fresh fruit of your choice
How To Make Pancake Mix
- Mash the banana in a bowl using a fork
- Add the 2 eggs and mash together
- Take the 1/3 cup oats and blend until fine (I use a magic bullet)
- Add the oats to the banana and eggs
- Add 1/2 tsp of baking powder
- Add cinnamon to taste
- Mix together
How To Cook Pancakes
- Heat a pan on the stove over medium heat
- Either add a dallop of olive oil or spray with olive oil cooking spray
- Once the pan is hot (think – water will sizzle on the pan), add 1/3 cup of the mixture
- Cook for about 2-3 minutes, flip and keep cooking
- Once finished cooking, set aside on a plate
- Finish cooking the remainder of the batter.
- Add syrup and fresh fruit to pancakes
