Banana Peanut Butter Oats Breakfast Bowl
This can be prepped the night prior to provide a quick, hearty and nutritious breakfast to get you going for the day. It can be easily transported as well. At its base are oats, nut butter, your choice of milk and banana.
Oats are a grain that is a good source of fibre and also contains complex carbohydrates for sustained energy, and protein. I add chia seeds for some healthy omega 3 fats as well. I use peanut butter and almond milk, and also add blueberries, but the great thing about this breakfast is that there is a lot of flexibility to adjust for tastes and flavours.
Ingredients & Directions
- In a glass bowl mash one banana
- Add ¼ cup rolled or quick oats depending on your preference to texture (rolled outs will be a bit chewier)
- Add ½-1 teaspoon chia seeds
- Add a couple teaspoonfuls of peanut or your favour nut butter
- Pour in 1 cup of your favourite nut/coconut/soy milk and mix to stir
- Cover and refrigerate overnight
Modifying the amount of nut butter and if the milk used is sweetened or flavoured will impact overall sweetness and flavour.
Next morning add some additional fruit if you wish (I love a handful of blueberries), nuts, seeds and maybe a sprinkling of cinnamon.
Stir together and enjoy!
