Breakfast is the most important meal of the day for many reasons.
- First, it revs up your metabolism for the day.
- Second, it provides you with an abundance of energy needed to go about your day. I personally like to have my biggest meal at breakfast as it helps me think clearer, gives me energy to exercise and to run after my 3 1/2 year old for the day!
This recipe below is not only extremely delicious and easy to make, but it is packed full of nutrients and very low in sugar.
Walnuts are a great source of omega 3 and a source of monounsaturated fatty acids. Walnuts also help reduce cholesterol, control diabetes, improve metabolism, act as a natural mood booster and aid in weight loss. Bananas are rich in potassium, vitamin C, vitamin B6 and are great for our digestion. Oats help keep our blood glucose levels stable and keep us satiated a lot longer.
Banana Walnut Breakfast Bake
- 4 bananas (preferably ripe)
- 1 cup of oats (use certified gluten free if you are celiac or sensitive to gluten)
- 1/2 cup of whole raw unsalted walnuts
- 1/2 cup apple sauce
- 1 cup raisins
Instructions:
- Preheat oven to 350 degrees.
- Mash bananas and then add in oats, walnuts, apple sauce and raisins.
- Mix until combined.
- In a 9×13 pan lined with parchment paper, pour mixture in and bake at 350 degrees for 25 minutes.
- Cut into squares and store in fridge.
