Our family has come up with an excellent way to get our daily dose of berries into our diet, and into our 3 year old who is not much of a fruit fan – Berry Ice Cream! This is the best ice cream you will ever have, is chalk full of nutrients and super quick and easy to make!
Very Berry Ice Cream
Ingredients
- 3 cups of frozen or fresh mixed berries (we use blueberries, raspberries, blackberries and strawberries)
- 1 fresh or frozen banana
Directions
- Put into food processor and blend
- If using a food processor, you may want to defrost the banana a bit before so it blends easier
- You may also need to add a touch of water to make the consistency smoother
- Optional toppings are ground flaxseed, whole raw nuts (my favourite are walnuts and almonds), and unsweetened coconut
Berries are full of vitamins, minerals and a great dose of antioxidants. Also when you add in whole raw nuts to your ice cream, the nuts will help your body absorb the phytonutrients even more. Ground flaxseed will ensure you get your daily dose of omega 3 and can be blended into the ice cream so you don’t even taste it.
