The answer, of course, is no. No vegetable could ever let someone see in complete darkness. However, this soup is super yummy and filled with carrots, which contain Vitamin A or retinol. We do need this vitamin to help us function in low-light environments because it is required by our bodies to synthesize rhodopsin, which is the pigment in the eye used in these conditions.
If you had a deficiency in Vitamin A you could develop night blindness which is also known as nyctalopia. Eating carrots at that point would improve your sight at night, so there is a little truth in the myth.
Carrot Peanut Butter Soup
Ingredients
- 5lbs carrots chopped
- 1 onion
- 4-5 cloves of garlic crushed
- 5-6 cups of veggie stock
- 5-6 cups of water
- 2/3 cup of peanut butter
- 2 tsp chilli garlic sauce
Directions
- Cook onions and garlic with coconut oil or olive oil in the bottom of a large pan
- Then add carrots, water and stock and a little salt and pepper
- Cook for 20 mins
- Then take off heat, add peanut butter and chilli sauce and then blend until smooth and creamy
- Then it’s ready to serve
This recipe makes a large pan so it’s perfect for batch freezing too.
