Carrot Ginger Soup
Ingredients
- 1 Tbs olive oil
- 1 small onion, chopped
- 2 cloves garlic, peeled and chopped
- 1 Tbs fresh ginger, peeled and chopped
- 1 tsp turmeric
- 1 tsp cumin
- Approx. 6 cups, peeled and chopped carrots
- 1 large sweet potato
- 6 cups homemade vegetable or chicken broth
- 2 Tbs honey
Method
- Heat oil over medium heat in large stock pan. Add onion and ginger and cook for about 5 mins
- Add turmeric, cumin and garlic; cook for 30-60 secs
- Add carrots, sweet potato, honey and stock and cook until vegetables are tender, approx. 30-40 mins
- Puree in blender, add lemon juice, and season with pink Himalayan salt and pepper
- Serve with a sprinkle of raw pumpkin seeds on top
