Are you in need of a nutritious and quick ‘breakfast-on-the-go’?
Try this recipe toasted and topped with nut butter or home-made jam.
Cherry Walnut Breakfast Bread
Ingredients
- 4 eggs
- 1 1/4 cups clarified butter or ghee
- 1 1/4 cups spelt flour
- 1 1/2 cups organic rolled oats
- 1/2 cup honey
- 1 tsp. baking powder
- 1 cup dried cherries*
- Handful of dry roasted walnuts or pecans
- 4 Tbsps nut butter
Directions
- Heat the oven to 350 degrees
- Whisk the eggs until frothy; add the butter and whisk for about 3-5 more minutes.
- Add the dry ingredients, honey, cherries and nuts; mix well.
- *No cherries? Try cranberries or raisins.
- Pour into a non-stick or lightly greased loaf pan. Bake for about 35 minutes.
- Opt: add cinnamon and ‘swirl it’ into the pan before baking.
Done! Not only a quick breakfast to eat, it’s quick to make, too.
