Chia Seed Pudding

Chia seeds were one of the main food sources in the Aztec and Mayan diet. These ancient civilizations believed that the chia seed provided supernatural powers. In fact, the word Chia is the Mayan word for strength.

This amazing little seed packs a powerful nutritional punch!

1oz serving of chia seeds contains

  • Fiber 11g
  • Protein 4g
  • Fat 9g
  • Calcium 18% of the RDA
  • Manganese 30% of the RDA
  • Phosphorous 27% of the RDA

They also contain decent amounts of Zinc, B1, B2, B3 and are high in antioxidants.

So I want to share with you one of my favorite chia seed recipes. 

Chia Seed Pudding

  • 2 cups coconut milk
  • 1/4 cup of chia seeds
  • 1/2 tsp vanilla
  • 1/4 – 1/2 tsp of cardamom
  • maple syrup or stevia to taste *Optional*

Whisk all ingredients together and let sit in the fridge to thicken.

I like to top it with berries, but it is also great on its own!
