When my husband and I went to his parents house, my mother-in-law made great Chicken Fajitas for us and we loved it!
Mexican Food is one of my favourite dishes and I like the idea of being able to cook & eat a lot of protein and vegetables in one go. (As much as I love cooking, yes I am still lazy!)
I wanted to recreate my own version of Chicken Fajitas by using seasonings instead of buying a store bought sauce, so it’s more fun and healthy!
This makes great a lunch or dinner. You can make a Chicken Fajita Wrap for an on-the-go lunch or simply serve it with some salad at the dinner table for a low carb dish:)
This also freezes well so you can portion and freeze it. You are good to go for the coming week!
Chicken Fajitas
Cooking Time: 20 min
Serving Size: 2
Ingredients
- 2 tsp Salt & Pepper
- 1 tbsp Dried Chili Pepper
- 2 tbsp Cumin
- 1 clove of Garlic
- 250g Chicken Breast
- 1 Yellow Pepper
- 1 Red Pepper
- Half Sweet Onion
For Wraps
- 1 Avocado
- 1/3 Greek Yogurt
- A little bit of Green Onions
How to
- In a pan, put olive oil on medium high heat.
- Add Chicken Breast and cook until the colour turns white. (You don’t have to cook thoroughly at this point.)
- Remove the Chicken.
- In the same pan, add all the vegetables and stir until golden brown.
- Put the Chicken back into the pan and mix well.
- Add all the seasonings and mix them until the flavour is well distributed.
For Wraps
- In a small bowl, put peeled and pitted avocado and mash it by using the back of a fork.
- On a wrap, layer Chicken Fajita, Avocado and Greek Yogurt.
- Sprinkle some Green Onions that are cut into very small pieces.
- Fold the wrap from the bottom and both sides to make a wrap.
