When it comes to soups, I really don’t discriminate. I love all soups, hearty soups, brothy soups, stews, bean soups, anything. But sometimes soups aren’t the most impressive and somehow the soups we make at home tend to pale in comparison to thought decadent soups we get at fancy cafes. Well that’s just because we haven’t met this soup yet.
There are many reasons why I love this soup. First, you only need four ingredients. That’s right 4! You also don’t need to spend hours chopping veggies to prep for this. There is virtually no prepping at all, and all of these ingredients can easily be kept on hand in your pantry and freezer for anytime you have a last minute lunch with friends!
Recipe:
Ingredients
- 1 Cup Brown Lentils
- 1 Cup Quinoa
- 4 Cups Veggie Broth
- 2 Cups Frozen Spinach
- Salt & Pepper to Taste
Instructions
- Add veggie broth, lentils and veggie broth to a soup pot and bring to a boil.
- Once the water is boiling add the spinach.
- Boil until lentils are plump and soft and quinoa has cooked, expanded and softened. If the quinoa absorbs too much of the liquid, add some water to thin the soup out.
- Add salt and pepper to taste!
That’s it! I also find that if I am in a rush in the morning I bring all the ingredients to a super boil and then shut the stove off and in 20 minutes not only is the soup cooked but it’s cooled down enough so you don’t burn your mouth off. This is definitely a soup that will impress and it’s perfect if you are hosting a lunch, just rip open a bag of mixed salad and there you go!
