Vegan Tofu Nuggets/Mozzarella Sticks
Ingredients
- 1 Block Extra Firm Tofu
- 1 Bag Pita Chips (Make sure they are vegan)
- 1 Plastic Freezer Bag
Steps
- Put pita chips into the freezer bag, seal the bag making sure to get as much air out as possible. Crush the pita chips with a mallet or heavy spoon or rolling pin or frying pan…
- Cut the tofu into cubes or nugget like shapes, the thinner the cut the dryer the nugget.
- Add the tofu cubes into the freezer bag with the pita chip bread crumbs, seal the bag (leave the air in this time) and shake the bag until all the tofu nuggets are evenly coated with the bread crumbs.
- I like to bake these on a cookie rack on top of a baking sheet, this avoids having to flip them halfway into the baking process, but if you don’t have a cookie rack just flip the nuggets halfway through.
- Heat your oven to 400ºF and bake nuggets for ~40 minutes or until crispy and firm.
- Dip these beauties in marinara sauce, ketchup, BBQ sauce, mustard. Use in sandwiches, wraps, or on top of stirfrys and pasta dishes.
