This recipe is not only easy to make but it makes a lot so you can always freeze some for an easy go-to dinner for those busy days!!
Dahl is a traditional dish from India, made with red lentils and spices. The lentils are a great source of protein and the vegetables, herbs and spices are a good source of vitamins, minerals and phytochemicals. Add some rice or quinoa to make a complete nutritional meal.
Easy to Make Dahl
Ingredients
- 2 organic cooking onions
- 1 organic carrot
- 4 cloves of organic garlic
- 3 tablespoons of minced fresh organic ginger
- 2 teaspoons curry powder
- 1 teaspoon cumin powder
- 1/2 teaspoon tumeric
- 2 1/2 cups of red lentils
- 8 cups of vegetable stock
- 1 3/4 cups of coconut milk
- 2 green onions
- 1/4 cup chopped cilantro
- 2 tablespoons vegetable oil
Directions
- Heat oil in large frying pan or wok over a medium heat.
- Stir in onions, carrots, garlic and ginger. Cook for 5 minutes or until onions are softened.
- Stir in curry powder, cumin and tumeric and cook for 30 seconds.
- Add lentils, vegetable stock and coconut milk and simmer for about 20-25 minutes until cooked. Lentils will have softened and the dish will look golden.
- Now all you have to do is add it on top of a bed of rice or quinoa or enjoy it on it’s own with a little cilantro and green onions on top.
