What’s for dinner? A question I hear multiple times a day with 5 kids in the house, and on some of those really hectic days, the answer is, “I don’t know.” We all know how important it is to plan ahead when trying to eat healthy, but in the rat race of life, some days that planning only takes us so far. This is especially true at the end of our week when the supply of food in the house is dwindling before our eyes. (Anyone else have a teenage boy in the house that eats more than everyone else combined? I feel your pain 🙂
So what to do on those days? Get creative! This past week we made a dish with whatever was left in the fridge and it was so yummy, I had to share. It was nutritious, delicious, super easy, and you can put whatever veggies you have left in the house in it. I didn’t include amounts of veggies because we literally used up whatever leftover bits and pieces of veggies we had in the house, but all were organic.
Eat Healthy While Cleaning Out The Fridge
Ingredients
- coconut oil
- ground turkey
- 2 garlic cloves
- 1 tsp. turmeric
- 1 tsp. cumin
- pink himalayan salt to taste
- broccoli
- green beans
- carrots
- spinach
- 1/4- 1/2 c organic veggie broth
Instructions
- Cook ground turkey in coconut oil, add garlic, turmeric, cumin and salt.
- When meat is done, add veggies and broth.
- Put a lid on top to steam the veggies to desired consistency, and that’s it!
So simple! Add a good quality soy sauce or liquid aminos if you like.
