Egg Salad Recipe!

I am a huge fan of egg salad.  Especially this egg salad. It’s a filling, clean lunch and I eat it often.

At 77 calories, 6 grams of protein and 5 grams of healthy fats, eggs have been called ‘the perfect food’, and it’s easy to see why.  Eggs are nutritious – including such vitamins as Vitamin A, B5, B6, B12, B2, D, E, K, Calcium and Zinc.

Eggs raise the HDL (“Good Cholesterol”), they are very filling but low calorie, and best of all, they contain all essential amino acids in the right ratios so our bodies can make full use of the protein in them!

I could go on and on about the benefits of eggs, but we know you are here for the recipe so here it is.

For the picture, I used homemade mayonnaise but this recipe also tastes great with Avocado. Try both and decide which is your favorite.

Ingredients

Serves 2

  • 4 Hardboiled Eggs
  • 1 Avocado (or homemade mayonnaise)
  • Dash of Himalayan Salt
  • 4 strips of sugar free bacon, cut into small pieces
  • 1 cup of baby tomatoes sliced in half
  • 1/2 cup scallions, chopped

Directions

  • Combine eggs, avocado, and salt until mixed well.
  • Place Egg Mixture over a cup or two of spinach or romaine lettuce.  Add bacon, tomato and scallions on top.
