It’s Monday and back to the busy week of work, kids and grind of life! Now if you are like me, you don’t have an incredible amount of time to spend on breakfast but you need something that will make you feel full but not overly stuffed. One of my favourite go to recipes for breakfast is my egg white omelette with sprout toast and fresh avocado.
Egg White And Sprout Toast With Avocado
Directions
- In a warm skillet add a small amount of extra virgin olive oil
- Add 1/2 cup of organic yellow orange or red peppers
- Let them cook for a few minutes
- Add 1 cup of organic baby spinach
- Sprinkle the veggies with a pinch of pink Himalayan salt
- Once the spinach cooks down, add 3 egg whites preferably from organic eggs if you can find them
- Let the omelette cook
- Sprout bread! My favourite! You can find many types in your organic freezer section. I love a combination with flax, seeds and sprouts. Place one slice in the toaster
- By this time I remove the omelette from the heat and cover
- Take half of a Hass Avocado in a bowl and mash it up until smooth
- You can add a pinch of cilantro for flavour
- Add your omelette to the plate along with your toast and scoop the avocado mixture on to the sprout toast
- Add fresh cracked pepper to taste
Voila! A yummy breakfast (or dinner) to get you started to your busy day!
