Fiber is a rough topic right?

Not everyone loves to eat it, but you know it’s important to have some, your digestion will thank you, not to mention your cholesterol and sugar levels that will come down with the help of fiber intake, just to mention some benefits.

So, maybe you can grab some cereal for breakfast or add a little flaxseed to your shake, but it becomes boring and not easy to handle when you’re on a morning rush.

What if I say that you could have a good portion of fibre while you’re on your way to your job or school? And I’m not talking about bars full of hydrogenated oils or lots of sugar that makes it worst than not having any fiber at all. This is the most fabulous way to eat healthy, delish and quick home made fiber muffins.

FIBER MUFFINS

Are you with me now ? I knew it, let’s get our hands dirty:

Ingredients

  • 51/2 Cups of high fiber cereal
  • 11/2 Cups of skim milk
  • 1 Tsp. of baking powder
  • 1 Cup of apple puree
  • 1 Egg
  • 1 cup of brown sugar or 6 Tsp. of Stevia
  • 1 S. of vanilla
  • ½ Cup of dry berries or raisins.

Directions 

  • Pre heat your oven at 350 F or 180 C. Grab a cupcake tray and grease it, with butter no margarine, a little good fat is a must and you will like your food to be as natural as it can be. You can always use cupcake papers and add colour to your recipe. 9 pieces approx.
  • Whisk the egg and add the milk and vanilla, soak cereal in it for 5 min.
  • Add the sugar until it’s completely solved and then the apple puree, you can use a blender or just whisk everything with your hands using 2 forks (Chef tip).
  • Fill your molds and get them into heat for 40 min. or until you get in a toothpick and it comes out clean.
