I am obsessed with chickpeas. Being a vegetarian, I really rely on fresh, hearty ingredients to make me feel full and satisfied. I always feel amazing after a homemade chickpea salad.
Chickpeas themselves are so versatile; they can be eaten raw, roasted, pureed into hummus, made into falafels, the possibilities are boundless.
Chickpeas are a great source of protein and fiber. They also contain many nutrients such as vitamin K, folate, phosphorus, zinc, copper, manganese, choline, and selenium.
Fresh And Fabulous Chickpea Salad
Recipe
- 6 cups of cooked chickpeas
- 1 medium onion, chopped
- 1 – 2 tomatoes, cubed
- Half of cucumber, cubed
- Handful of Parsley
- 1 handful of spinach, chopped
- Olive Oil
- Balsamic Vinegar
- Mint leaves ( optional )
- Shredded cabbage ( optional )
- Salt and pepper to taste
Instructions
- Chop and prepare all vegetables.
- Combine the vegetables with chickpeas in a large bowl
- Drizzle on Olive oil
- Drizzle on balsamic vinegar
- Salt and pepper to taste
