Pancakes definitely make the list of my top 3 favourite breakfasts. I mean, how can you not love them? So satisfying and delicious, and a good homemade recipe lets you control exactly what goes in them without having to worry about any nasty or unnecessary ingredients! This simple, wholesome recipe is sure to be a hit. I hope you love it as much as I do!
GF Sweet Potato Pancakes
Ingredients
- 1/3 cup sweet potato puree
- 1 large egg
- 1/4 cup milk
- 1 tbsp maple syrup
- 1/2 cup GF oat flour*
- 1/2 tsp baking powder
Instructions
Combine all ingredients. Pour batter onto a heated griddle/pan, approximately 1/4 cup for each pancake. Cook both sides on medium-low heat until golden. Serve warm, with all your favourite pancake toppings – such as maple syrup, berries or fruit, or dark chocolate chips. Enjoy!
*If you do not have any oat flour on hand, simply add 1/2 cup rolled oats to your food processor and pulse a couple of times. You’ll have flour in no time!
