Gluten Free Chickpea Burgers
Ingredients
- One-19 oz can of chickpeas, drained and rinsed
- 2 eggs
- 1/2 cup almond meal
- 1 Tbs olive oil
- 1/2 cup combination of: chia, hemp, flax (crushed) seeds
- Pinch of salt and pepper
- 1/2 grated carrots
- 1/4 cup fresh cilantro
- 1/4 cup chopped red onion
- 1/4 cup fresh parsley
Instructions
- Place all ingredients in food processor and blend until a paste
- Shape into 8 patties
- Cook as desired- on the barbecue, in oven or in frying pan
