Gluten Free Chickpea Burgers

Ingredients

  • One-19 oz can of chickpeas, drained and rinsed
  • 2 eggs
  • 1/2 cup almond meal
  • 1 Tbs olive oil
  • 1/2 cup combination of: chia, hemp, flax (crushed) seeds
  • Pinch of salt and pepper
  • 1/2 grated carrots
  • 1/4 cup fresh cilantro
  • 1/4 cup chopped red onion
  • 1/4 cup fresh parsley

Instructions

  • Place all ingredients in food processor and blend until a paste
  • Shape into 8 patties
  • Cook as desired- on the barbecue, in oven or in frying pan
