These muffins are so quick and easy to make! They are super moist, filling and packed with super ingredients. They are gluten, dairy and refined sugar-free.
These muffins are a staple in my household. They’re an easy grab-and-go snack or accompany perfectly with your morning smoothie. If you’re a parent, these muffins are perfect for getting your kids to eat their veggies in a yummy way, I bet they won’t even taste them!
Green Goodness Blender Muffins
Ingredients
- 1 medium zucchini, chopped
- 1 medium banana, sliced
- 1 1/2 cup spinach
- 1 cup pumpkin puree
- 1/4 cup honey
- 1 1/2 tsp. Vanilla
- 2 eggs
- 2 tbsp. Chia seeds
- 1/4 tsp. Himalayan sea salt
- 1 1/2 tsp. Baking powder
- 1/2 tsp. Baking soda
- 1 1/2 tsp. Cinnamon
- 2 cup gluten-free quick oats
- Top muffins with cacao nibs
Instructions
- Preheat oven to 400 degrees Fahrenheit.
- Place all ingredients in a blender, and blend together until all ingredients are well incorporated. Scape down the sides if necessary.
- Grease muffin tins with coconut oil by using a paper towel.
- Fill the 12 tins full and top with desired amount of cacao nibs.
- Bake for 15- 17 minutes, let cool for 5.
