There are a lot of unrealistic things on TV, but the most absurd seem to be episodes that feature a happy family sitting down at a dining room table, eating a hearty home cooked breakfast before going to work or school in the morning.
For my fellow night owls who struggle to wake up and get to work on time in the morning, or for those of you who struggle to get kids ready and out of the house for school that often starts before 7:30 am each morning, the thought of having time to cook and sit down to eat breakfast on weekday mornings is about as realistic as a spaceship landing on your front lawn.
Not to worry! Before you simply skip breakfast or reach for a pop tart filled with sugar, preservatives, and artificial colours and flavourings, consider this easy breakfast meal prep option: Breakfast Quiche
Healthy Breakfast Meal Prep Idea: Quiche
Ingredients
- 1-2 Cans of Annie’s organic crescent rolls
- 1 Package of Applegate’s organic turkey sausage (optional)
- 1/4 Package of Alexa organic hash-browns
- 1 Organic zucchini (yellow)
- 1/2 Organic red and green bell pepper
- 1/3lb Organic Spinach
- 1/2 Package organic mushrooms (about 8 full mushrooms, sliced)
- 1/2 Package of Shredded Cheese (optional)
- 6 Organic Eggs
Directions
- Brown sausage in skillet
- Add spinach to skillet and cook until reduced
- Chop remaining vegetables
- Roll out crescent rolls in the bottom of glass baking dish
- Add sausage and spinach on top of crescent rolls
- Add chopped vegetables
- Scramble eggs, adding salt and pepper to taste (I often add turmeric to eggs as well for its anti-carcinogenic and nutritional properties!)
- Cover top of quiche with shredded cheese (this is optional and can be left out for dairy free-folks)
- Pour egg batter on top (eggs will seep into vegetables and will expand while cooking, so do not add extra eggs, even if your pan doesn’t seem “full”)
- Cook at 375 for about 45 min, or until eggs are no longer liquid and crescent dough has browned
