Healthy Breakfast Recipe
I got this recipe from my best friend years ago. It has been one of my favourites ever since. With a busy schedule it’s hard to stay healthy, that’s why I wanted to share this recipe with you.
These delicious egg muffins is super quick and easy to make. They are a healthy and nutritious way to start your morning or perfect to pack for lunch. Here is my recipe:
Ingredients
- 6 Eggs
- 2 Tsp of sour cream
- 0.5 tsp of baking soda
- Hand full of spinach, bell peppers and broccoli
- Seasoning of your choice
Directions
- Preheat oven to 175C
- Mix eggs, sour cream, baking soda, spinach and seasoning all together in a bowl. Put the rest of the vegetables in big muffin baking cups. Pour the egg mixture over the vegetables.
- Bake the muffins in the middle of the oven for about 20-25 minutes.
- You can easily switch up this recipe by adding other ingredients such as feta cheese, mushrooms, ham, bacon, cabbage, corn, beans, chili or salmon. Only your imagination can stop you.
