Healthy Treats!

It’s that time of year! Holiday parties, and family dinners full of sugary treats and an obscene amount of carbs. How do we stay on track with a healthy diet with all those tasty foods at our fingertips? Here I have included a couple of my favourite easy to make recipes to bring with you to your holiday events that everyone will enjoy!

Protein Packed Chocolate Chip Cookies

Ingredients:

  • 1 cup coconut flour
  • 2 scoops vanilla whey protein powder
  • 1/4tsp baking soda
  • 1/8 tsp himalayan salt
  • 3/4 stevia chocolate chips
  • 2 – 4oz jars baby food apple sauce
  • 2 eggs
  • 1 cup coconut palm sugar
  • 4oz water

Directions:

Preheat your oven to 350F. In a large mixing bowl mix the coconut flour, vanilla whey protein powder, baking soda, and himalayan salt thoroughly. In a medium mixing bowl mix together the eggs and coconut palm sugar until dissolved. When the coconut palm sugar is dissolved mix in the baby food apple sauce and water in the medium mixing bowl. *Hint: just fill up one of the baby food jars to measure out the 4oz of water! When all the wet ingredients are blended well, pour them into the large mixing bowl with the dry ingredients. Mix well and add the stevia chocolate chips and mix. Let the batter sit and rest for about 15 to 20 minutes for the coconut flour to absorb the wet ingredients.

Line a cookie sheet with parchment paper and roll the batter into balls slightly bigger than pingpong balls, and place about an inch and a half apart in the cookie sheet. Bake for approximately 15-20 minutes, or until golden brown on the bottom. This recipe yields about 16-20 cookies.

Healthy Apple Crisp and Nice Cream!

Ingredients:

  • 8-10 apples
  • 1 cup almond meal
  • 1/2 cup crushed walnuts
  • 1 cup coconut palm sugar
  • 1/2 cup coconut oil
  • 2tbsp cinnamon
  • 5 diced and frozen bananas
  • 1tsp vanilla extract
  • 1/4 cup almond milk
  • 2tbsp maple syrup or honey

Directions:

Preheat your oven to 350F. In a 8″x11″ glass baking dish layer the bottom with your apples peeled and chopped into wedges. In a medium sized mixing bowl mix your almond meal, crushed walnuts, coconut palm sugar, coconut oil, and cinnamon. When you have made a crumble mixture spread it evenly on top of your apples in your glass baking dish. Place in the oven for approximately 25-30 minutes, or until the apples are soft and the crumble has become a golden brown.

Place the diced and frozen bananas in a food processor, along with the vanilla extract, almond milk and maple syrup or honey. Pulse for about a minute and then put the food processor on high until the mixture is nice a smooth. You can eat this immediately for more of a soft serve “nice” cream or you can put into a freezer safe sealed container and freeze for a few hours before serving for more of a harder “nice” cream!
